Green Beans
Coffee is grown in many countries through the tropical regions. Australia grows some coffee. Most comes from exotic places such as Colombia, Brazil, PNG & Ethiopia.
The coffee is harvested & sold into the coffee markets of the world as green beans. Green beans are not palatable & the essential compounds are substantially “locked up”.
The beans are reasonably stable but from the moment it is picked from the coffee bush they start to lose their natural oils & essences. The decay is slow but relentless.
As green beans, coffee may travel great distances – perhaps to Europe for storage & it may be a year or maybe far more before it arrives in Australia for roasting. In this time it slowly decays.
