Where should you store your coffee?
Some say in the fridge. Others say in the freezer. What are the facts?
The short answer is to seal it well & store it somewhere cool & dark. Like a cool cupboard. Here's why.
Air, light & moisture are the natural enemies of coffee. So is warmth - but that does NOT mean that the fridge is a coffee haven!
Coffee absorbs moisture very readily (it's hygroscopic) & when that water enters the coffee - whole bean or ground coffee - it rapidly deteriorates & becomes water-logged. Air contains significant quantities of water & your coffee simply sucks it up.
Airborne water contains contaminents - especially in your fridge. Anything that has a smell contains contaminemts - that's what the smell is! In your fridge that may be garlic, onion, milk residues, fruit aromas - quite a soup! And when that enters your coffee - YUCKY!
But hold on - what of airtight containers? The truth is that very few containsers really ARE airtight. Contaminents do seep in through tiny holes & right into your wonderful coffee.
Of course to use your coffee you have to open the container and WHAMO! Cold coffee - warm kitchen air - water condenses right onto your lovely coffee & it's ruined!
It's even MORE pronounced when your coffee is stored in the freezer as it's colder & more water with those juicy contaminents suck into your coffee.
The freezer has other effects too. There is always SOME water in your coffee when you freeze it. As water freezes into ice it expands. This breaks up your coffee so that when it is thawed there is MUCH more surface area to suck up atmospheric water - & all it contains.
The freezer however does more - MUCH MORE!
Ice can go directly from a solid to a gas through a process called "sublimation" (define). Ever wondered why ice in your ice cube tray "evaporates" if you don't use it for a while? That's sublimation. It turned directly from solid ice to water vapour without turning to liquid.
That happens to the water in your coffee too. Look on the lid of the container - there will be ice crystals. And when that water left your coffee it took many of the wonderful compounds that makes your coffee taste so good! The result is bland, sad coffee...
So, what does a poor coffee-lover do?
Leave your coffee in the special foil-lined bag it came in & store it in a dark, cool cuboard.
Even better - DRINK it quickly! After a month you will notice the decline so get into it! Enjoy it! You can always buy more FRESH COFFEE from Captain Coffee, online & conveniently!
If you do decide to store it in a container do NOT NOT NOT use plastic! The "smell" from the plastic will enter your coffee and taint it. Use stainless steel or glass - with a really good seal too!
